Sausage And Potatoes - cooking recipe

Ingredients
    1 to 2 lb. sausage links
    2 to 4 lb. potatoes
    3 large onions for large portion, 1 to 2 onions for smaller portion
    1 medium can Italian tomatoes (optional)
    salt and pepper to taste
    1 tsp. oregano (if tomatoes are used)
    1 tsp. thyme (if tomatoes are not used)
    sprinkling of olive oil over all before baking, if desired
Preparation
    In large
    baking
    pan,
    cut
    sausage
    links
    (keep them whole, do not slice, just separate from the ring).
    Peel, wash and
    slice potatoes
    into
    quarters.
    Place
    potatoes
    around sausage.
    Peel and
    slice
    onions into eighths.
    Place around sausage.
    If
    you are
    using
    the
    Italian tomatoes, break up tomatoes by
    squeezing and
    spread over sausage, potatoes and onions.
    Add enough
    water to cover the bottom of the pan and sprinkle the spices over all. Cover pan with foil and bake at 325\u00b0 for 3/4
    of
    an
    hour. Remove
    the foil and bake for 1/2 hour, making sure
    there is water or sauce at bottom of pan so potatoes won't stick.
    Serves 4 to 6.
    Accompany with a tossed green salad and French or Italian bread.
