Squash Casserole - cooking recipe

Ingredients
    3 lb. yellow squash, sliced in small pieces
    1 1/2 c. grated carrots
    1/2 c. chopped onion
    1/2 c. margarine, divided
    1/4 c. flour
    1 c. milk
    1/2 tsp. black pepper
    pinch of nutmeg
    1 (8 oz.) carton sour cream
    1 jar pimientos
    1 pkg. stuffing herb mix
Preparation
    Preheat oven to 350\u00b0.
    Steam squash, carrots and onion until tender.
    Drain in colander, mashing out water with spoon.
    Remove all excess water.
    Meanwhile, melt 1/4 cup margarine in a skillet over medium heat.
    Stir in flour and cook 1 minute.
    Then gradually add milk; stir 1 more minute.
    Add salt, pepper and nutmeg.
    Remove from heat; add sour cream and pimientos to squash mixture.
    Fold into skillet mixture.
