Squash Casserole - cooking recipe

Ingredients
    2 lb. yellow squash (3 c. mashed)
    1 c. sour cream
    2 carrots, grated
    1 onion, chopped
    1 can cream of mushroom soup
    salt and pepper to taste
    vegetable cooking spray
    2 c. crushed Ritz crackers, divided
    1 Tbsp. margarine
Preparation
    Slice squash; cook in water over medium-high heat until tender; drain and mash.
    In large bowl, combine squash, sour cream, carrots, onion, soup, salt and pepper; mix thoroughly. Spray a 3-quart casserole dish with vegetable spray.
    Sprinkle 1 cup of crackers on bottom of casserole dish.
    Pour squash mixture over crackers; top with remaining cup of crackers.
    Dot with margarine.
    Bake at 350\u00b0 for 40 minutes.
