Picante Chicken And Rice - cooking recipe

Ingredients
    4 boneless, skinless chicken breasts
    1/3 c. coarsely chopped onion
    3 large garlic cloves, minced
    1 Tbsp. vegetable oil
    1 1/4 c. chicken broth
    1 c. medium picante sauce
    1 c. converted rice
    1 ripe avocado, sliced
    1 medium tomato, chopped
    1/2 c. shredded Cheddar cheese
    salt to taste
Preparation
    Sprinkle chicken breasts with salt; set aside.
    In deep pot, saute onion and garlic in oil.
    Add chicken broth and picante sauce.
    Bring to a boil.
    Stir in rice.
    Arrange chicken breasts over the rice.
    Cover tightly and simmer for 20 minutes.
    Remove from heat.
    Garnish with avocado, tomato and cheese.
    Let stand, covered, for 5 minutes.
    Makes 4 to 6 servings.
