Jello Vegetable Salad - cooking recipe

Ingredients
    1 tomato, seeded and chopped (1 c.)
    1/2 c. diced, seeded cucumber
    1/4 c. chopped green pepper
    2 green onions, sliced
    2 Tbsp. vinegar
    1/4 tsp. salt
    dash of pepper
    1 (4 serving size) pkg. sugar-free Jell-O (lemon flavor)
    3/4 c. boiling water
    1/2 c. cold water
    ice cubes
Preparation
    Combine vegetables, vinegar, salt and pepper; set aside. Dissolve Jell-O in boiling water.
    Combine cold water and ice cubes to make 1 1/4 cups.
    Add to Jell-O; stir until slightly thickened.
    Remove any unmelted ice.
    Add vegetable mixture. Chill until thickened, about 5 minutes.
    Pour into individual dishes.
    Chill; soft set in 30 minutes.
    Garnish with vegetables. Makes 6 servings.
