Jambalaya (Large) - cooking recipe
Ingredients

1 c. green onion
2 white onions
2 stalks celery (optional)
3 c. rice
sausage
1 can tomato paste
good parts of 2 chickens
Preparation

Brown chickens and sausage in grease (small amount).
Take up meat and remove some of the grease.
Put rice in and brown some more.
Add onions and celery; brown a little.
Add 6 cups hot water.
Season to taste (sauce) with salt and pepper.
Add chicken and sausage; bring to simmer.
Cover and let simmer for 20 minutes. Turn mixture after 20 minutes and be sure to get all the rice from the bottom of pan.
Let cook until tender.
