Chicken, Potato And Onion Bake - cooking recipe

4 boneless, skinless chicken breasts, pounded
4 to 5 potatoes, sliced scallop style
2 onions, sliced in thin rings
4 bay leaves
2 c. chicken stock (can use bouillon cubes)
salt and pepper
Preparation

Preheat oven to 400\u00b0.
In a large casserole dish, place a a layer of sliced potatoes and a layer of onions.
Sprinkle with salt and pepper.
Alternate layers until vegetables are gone.
Place chicken breasts on top and sprinkle with salt and pepper.
Tuck bay leaves under the chicken.
Cover and cook for 45 minutes to 1 hour.
