Twice-Baked Yams - cooking recipe

Ingredients
    4 yams (about 3/4 lb. each)
    4 Tbsp. butter
    1/4 c. milk
    1 1/4 tsp. salt
    1/4 c. dried bread crumbs
    1/4 tsp. dried thyme
    1/4 tsp. pepper
Preparation
    Heat oven to 450\u00b0.
    Bake yams until tender, about 1 1/4 hours. Remove from oven and cut about 1/2-inch off the tops of the yams. Scoop out flesh from yams and tops, leaving a shell in the bottoms.
    Discard tops.
    Put flesh in large bowl and mash with 2 tablespoons of the butter, the milk and 1 teaspoon salt.
    Place shells on baking sheet and fill with mashed yams.
    In saucepan, melt remaining 2 tablespoons butter.
    Stir in bread crumbs, remaining salt, thyme and pepper.
    Top potato with bread crumb mixture.
    Return to oven and bake until browned, 10 to 15 minutes.
