Baked Liver - 1871 - cooking recipe

Ingredients
    2 lb. calves' liver, in 1-inch pieces
    4 slices fat salt pork
    1 Tbsp. flour
    1 medium onion, sliced
    1/6 tsp. pepper
    2/3 tsp. salt
    1/2 c. stewed tomatoes
Preparation
    Lay pork strips in slits cut in liver.
    Place onion in baking dish; place liver on it.
    Sprinkle with salt, pepper and flour mixture and pour tomatoes over.
    Bake in oven at 350\u00b0 until tender.
