Sandy'S Cornbread Salad - cooking recipe
Ingredients

3 boxes of Jiffy cornbread mix, baked, cooked and crumbled
1 lb. bacon, cooked and crumbled
2 large tomatoes, diced
2 medium purple onions, diced
2 bell peppers, diced
1 c. sweet pickle relish, drained (save juice)
2 c. mayonnaise
1 c. sweet pickle juice
Preparation

Mix bacon, tomatoes, onions, peppers, and pickle relish. Mix the pickle juice with mayonnaise and set aside. Add 2 inches of cornbread lightly packed and 1 inch of the veggie mix and top with mayo sauce. Run knife through to the bottom of the bowl so the sauce can get to the bottom. Repeat the steps until all of the ingredients are used.
