Corn And Spinach Fritters - cooking recipe

Ingredients
    1 c. spinach, torn and blanched
    1 c. whole kernel corn, drained
    1/4 c. shredded carrots
    1/3 c. Mozzarella cheese, shredded
    2 egg whites
    1 Tbsp. cornstarch
    1 clove garlic, minced
    2 Tbsp. olive or canola oil
    salt and pepper to taste
    parsley or chives for garnish
Preparation
    Mix spinach, corn, carrots, cheese, egg whites, cornstarch and garlic.
    Heat oil and drop mixture by well rounded tablespoons into oil.
    Flatten gently with spatula.
    Cook until crispy and brown, about 3 minutes on each side.
    Garnish with parsley or chives.
