Holiday Potatoes - cooking recipe
Ingredients

3 lb. Irish potatoes, peeled, stewed and hot
1 (8 oz.) cream cheese (room temperature)
1/4 c. margarine
1/2 c. sour cream
1/2 c. milk (plus)
2 eggs, slightly beaten
1/4 c. finely chopped onion
1 tsp. salt
1 tsp. pepper
Preparation

In a large mixing bowl, mash potatoes as usual.
When lumps are removed, add cream cheese and butter.
Beat until well blended.
Add sour cream.
Pour beaten eggs into milk; add to mixture.
Beat until light and fluffy.
Add salt, pepper and onion.
Be sure mixture is thin.
