Tabbouli Salad - cooking recipe

Ingredients
    1 1/2 c. cracked bulgur wheat
    2 c. boiling water
    1/2 c. olive oil
    1/4 c. lemon juice
    1 tsp. salt
    1/2 tsp. pepper
    3/4 to 1 c. parsley
    2 tsp. dried mint
    1/2 c. green onions, chopped
    1 to 3 tomatoes, diced
    1 (2 1/4 oz.) can sliced black olives
    1/2 c. celery, diced
    1 medium cucumber, diced and seeded
Preparation
    Pour boiling water over wheat and let stand 1 hour.
    Drain well in colander.
    Add remaining ingredients and blend well. Chill at least 2 hours.
