Strawberry Cream Gelatin Salad - cooking recipe

Ingredients
    1 1/2 c. boiling water
    1 (8 serving size) pkg. sugar-free strawberry gelatin
    2 (10 oz.) pkg. frozen sliced strawberries, partially thawed
    1 (16 oz.) can crushed pineapple, drained
    1/2 c. powdered sugar
    1/2 c. soft style light cream cheese (not fat-free)
    1 c. fat-free Ricotta cheese
Preparation
    In large bowl, stir together water and gelatin until dissolved.
    Stir in strawberries and pineapple.
    Pour half of mixture into an 11 x 7 x 1 1/2-inch baking dish.
    Chill in refrigerator 30 minutes or until semi-firm.
    Set remaining gelatin mixture aside at room temperature.
