Apple-Pumpkin Chewies - cooking recipe

Ingredients
    2 large Granny Smith apples
    1 c. canned pumpkin
    1/4 c. molasses
    1/4 c. packed brown sugar
    1 tsp. grated lemon zest
    1/2 tsp. vanilla
    1 c. unbleached all-purpose flour
    1/4 c. rolled oats
    1 tsp. baking powder
    1/2 tsp. ground ginger
    2 egg whites, lightly beaten
Preparation
    Preheat oven to 350\u00b0.
    Spray nonstick baking sheet with cooking spray.
    Wash and core, but do not peel, the apples. Grate apples into a medium sized bowl (this should make about 2 cups).
    Add pumpkin, molasses, sugar, lemon zest and vanilla. Stir to combine.
    Set aside.
