Red Beans And Rice - cooking recipe

Ingredients
    1 c. kidney beans
    1 clove garlic
    2 Tbsp. parsley
    Eckrich sausage, cubed
    3 c. water
    1 medium onion
    1 large bay leaf, crushed
Preparation
    Cook beans in water; season with salt and bacon drippings. Add sausage and cook for 1 1/2 to 2 hours.
    Add onion, celery, garlic and bay leaf.
    Cook over low heat for 1/2 to 1 hour.
    Add heated water, if needed.
