Ingredients

8 chicken thighs, skinned
3 Tbsp. Dijon mustard
1 Tbsp. lime juice
1 medium lemon
1/4 c. margarine, melted
1/4 c. seasoned bread crumbs
Preparation

Combine 2 tablespoons lemon rind and bread crumbs.
Combine 3 tablespoons of lemon juice, mustard and lime juice.
Melt margarine in a 9 x 13-inch baking dish in oven.
Rinse and dry chicken.
Coat with mustard mixture.
Roll coated chicken in bread crumbs and place in pan, meaty side down.
Bake 20 minutes.
Turn and bake another 20 minutes at 350\u00b0.
