Carrot Fruitcake - cooking recipe
Ingredients

1 1/2 c. chopped nuts
1 c. chopped mixed candied fruit
1 c. chopped dates
1 c. raisins
3 c. all-purpose flour, divided
2 c. sugar
1 1/2 c. vegetable oil
4 eggs
2 tsp. baking powder
2 tsp. soda
3 c. finely chopped carrots
1 tsp. salt
2 tsp. cinnamon
Preparation

Combine nuts, fruit, dates and raisins with 1/2 cup flour; set aside.
In a large mixing bowl, combine sugar and oil; mix well. Add eggs, one at a time, beating well after each addition. Combine baking powder, soda, cinnamon, salt and remaining flour; gradually add to sugar mixture, beating until smooth.
Fold in carrots and fruit mixture.
Spoon into a greased and floured 10-inch tube pan.
Bake at 350\u00b0 for 1 hour and 20 minutes or until cake is done.
Cool for 15 minutes before removing from pan to cool on a wire rack.
Yield:
12 to 16 servings.
