Apricot Jam - cooking recipe

Ingredients
    1 lb. dried apricots, chopped
    sugar
    honey
    1 Tbsp. lemon juice
    1/4 tsp. almond extract
Preparation
    Place the chopped apricots in a saucepan.
    Cover with water. Simmer until the apricots are soft and tender, about 1/2 hour. Add water if necessary to keep apricots covered.
    With slotted spoon, remove fruit pulp and measure.
    Return to pan.
    For every cup of fruit, add 1/3 cup sugar and 1/3 cup honey.
    Add lemon juice.
    Simmer 1/2 hour until thickened.
    Stir in the almond extract.
    Pour into hot, sterilized jars and seal with paraffin.
