Apple Mix-In-The-Pan Cake - cooking recipe
Ingredients

2 c. chopped apple
2/3 c. sugar
1 c. all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 c. brewed coffee
3 Tbsp. cooking oil
1 egg
1 tsp. vanilla
1/4 c. chopped walnuts or pecans
Preparation

Place chopped apple in an ungreased, 8-inch, square baking pan.
Sprinkle with sugar.
Let stand 10 minutes.
Combine flour, cinnamon, baking powder, baking soda and salt.
Add to apples; toss gently.
Combine coffee, oil, egg and vanilla; stir well. Add to apple mixture in pan.
Stir gently until well blended. Stir in nuts.
