Sweet Potato Pecan Pie - cooking recipe
Ingredients

1 c. mashed cooked fresh sweet potatoes
1/4 c. butter, softened
2/3 c. packed dark brown sugar
4 eggs
3/4 c. dark corn syrup
1 tsp. vanilla extract
1 c. chopped pecans
Preparation

Cream butter with brown sugar.
Beat in eggs, one at a time; blend in corn syrup, vanilla and mashed sweet potatoes.
Stir in pecans and turn into unbaked pie shell.
Bake in 400\u00b0 oven for 10 minutes.
Reduce heat to 350\u00b0 and bake 30 minutes longer, until filling is set and pastry browned.
Cool.
Serve with whipped cream, more pecans or ice cream.
Serves 8.
