Spicy Carrot Cake - cooking recipe

Ingredients
    1 1/2 c. firmly packed brown sugar
    3/4 c. vegetable oil
    4 eggs
    1 1/2 c. all-purpose flour
    1 1/2 c. Quaker oats
    1 Tbsp. baking powder
    1 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. allspice
    2 1/2 c. shredded carrots
    3/4 c. raisins
    3/4 c. chopped nuts
Preparation
    Heat oven to 350\u00b0.
    Grease and flour a 12-cup fluted tube pan. In a large bowl, combine sugar and oil.
    Add eggs, one at a time, beating well after each addition.
    In medium bowl, combine remaining ingredients.
    Add the sugar mixture, mixing just until dry ingredients are moistened.
    Pour into prepared pan.
    Bake 45 to 50 minutes or until wooden pick inserted in center comes out clean.
    Cool 10 minutes.
    Remove from pan.
    Cool completely on wire rack.
    Drizzle with confectioners sugar icing, if desired. Makes 12 to 16 servings.
