Salmon Pasta Salad - cooking recipe
Ingredients

1 2/3 c. (14 3/4 oz. can) Pacific pink salmon
5 c. (8 oz. dry) cooked, chilled pasta
1/2 c. thinly sliced carrots
1/2 c. thinly sliced celery
1/3 c. sliced ripe olives
1/4 c. chopped green onions
1/4 c. thinly sliced red or green pepper
2 Tbsp. grated Parmesan cheese
1/2 c. red wine vinegar
1/4 c. vegetable oil
2 Tbsp. olive oil
1 tsp. sugar
1 tsp. dried, crushed oregano leaves
1 tsp. salt
1/4 tsp. pepper
Preparation

Drain salmon; remove skin and bones, if desired.
Break into large pieces.
In medium bowl, combine salmon with pasta, carrots, celery, olives, onions, pepper and cheese.
Separately, combine remaining ingredients.
Mix well. Pour over salmon mixture.
Toss carefully to coat.
Cover and chill or serve immediately.
Makes about 5 servings.
