Southern Pralines - cooking recipe

Ingredients
    2 c. granulated sugar
    3/4 tsp. soda
    1 c. light cream
    1 1/2 Tbsp. butter
    2 c. pecan halves
Preparation
    Combine sugar and soda in 3-quart saucepan; mix well. Stir in cream. Bring to boiling over medium heat, stirring constantly. Cook and stir to soft-ball stage (234\u00b0). (Mixture caramelizes slightly as it cooks.) Remove from heat; add butter. Stir in pecans; beat until thick enough to drop from spoon (takes only 2 or 3 minutes). Drop from tablespoon on waxed paper. If candy becomes too stiff to drop, add a tablespoon of hot water. Makes 2 1/2 dozen.
