Ingredients

1 c. sugar
2 Tbsp. flour
1/4 tsp. salt
4 c. light cream or half and half
4 eggs, beaten
4 large ripe bananas, mashed (about 2)
1 Tbsp. lemon juice
1 tsp. vanilla
Preparation

Combine sugar, flour and salt in saucepan. Gradually stir in cream. Bring to boil, stirring constantly, over low heat; simmer 2 minutes. Add small amount of hot mixture to egg mixture. Mix well. Add egg mixture to remaining hot mixture. Simmer on low heat 1 minute. Remove from heat. Add bananas, lemon juice and vanilla. Mix well. Pour in freezer. Follow manufacturer's directions. Makes 2 quarts.
