Sweet Potatoes In Orange Cups - cooking recipe

Ingredients

4 small oranges
2 c. cooked, mashed sweet potato
1/4 c. firmly packed brown sugar
1 tsp. grated orange rind
1/4 c. plus 2 Tbsp. fresh orange juice
1 tsp. butter flavoring
3/4 tsp. ground cinnamon
1/4 tsp. salt
1/2 c. miniature marshmallows

Preparation

Cut oranges in half crosswise.
Clip membranes and carefully remove pulp (do not puncture bottom).
Reserve orange pulp for other uses.
