Beef With Green Peppercorn And Mustard Sauce - cooking recipe

Ingredients
    3 Tbsp. drained green peppercorns in brine
    3 Tbsp. dijon mustard
    3 Tbsp. unsalted butter
    5 tsp. flour
    1 c. beef broth
    1/2 c. whipping cream
    vegetable oil
    16 oz. top sirloin or pork loin
Preparation
    In glass bowl, mash peppercorns.
    Add mustard, butter, and flour.
    Blend well.
    (Can be prepared 1 day ahead if covered and refrigerated.)
    Heat oil in skillet over high heat.
    Season steak with salt and pepper.
    Cook to desired doneness.
    5 minutes per side for rare.
    Put meat aside.
    Pour off drippings from the skillet.
    Add broth and cream to same skillet.
    Boil until sauce thickens slightly, scraping up browned bits, about 3 minutes.
    Add peppercorn mixture.
    Boil until sauce thickens enough to coat spoon, whisking constantly, about 1 minute.
    Season sauce with salt and pepper.
    Slice steak crosswise.
    Arrange slices on plate. Spoon sauce over steak.
