Marinated Cucumbers - cooking recipe

2 medium cucumbers
3 Tbsp. salad oil
3 Tbsp. cider vinegar
1 Tbsp. minced pimentos, drained
1 Tbsp. minced parsley
1 1/2 tsp. sugar
1/4 tsp. salt
1/4 tsp. basil
Preparation

About 1 1/2 hours before serving, peel cucumbers, if desired, leaving a few strips of skin on for color.
Thinly slice cucumbers.
In a large bowl, combine cucumbers and remaining ingredients, tossing to mix well.
Cover and refrigerate at least 1 1/2 hours to blend flavors.
Stir occasionally.
Makes approximately 6 servings.
