Minestrone Di Oregon Soup - cooking recipe

Ingredients
    1/4 c. olive oil
    1 c. onion, sliced
    1 c. carrots, diced
    1 c. celery, diced
    2 c. potatoes, diced
    3 c. cabbage, shredded
    2/3 c. Italian tomatoes (canned)
    3 c. seasonal veggies (zucchini, green beans, peas, broccoli), chopped
    6 c. beef broth
    1 1/2 c. canned or cooked white beans
Preparation
    Saute onion in oil.
    Add carrots, potatoes, other veggies, broth and meat.
    Cover and cook over low heat for 3 hours.
    Add beans and simmer 15 minutes.
