Best Cheese Cake - cooking recipe

1 c. graham cracker crumbs
1 Tbsp. sugar
1/2 tsp. ground cinnamon
1 Tbsp. butter or margarine, melted
2 1/2 lb. cream cheese, softened
1 3/4 c. sugar (for cake)
3 Tbsp. flour
1 1/2 tsp. orange rind, grated
5 eggs
2 egg yolks
1/4 c. milk
Preparation

Combine in a small bowl graham cracker crumbs, sugar, cinnamon and butter.
Press firmly over the bottom of a lightly greased 9-inch spring-form pan.
(Chill briefly before filling.)
Blend together the cream cheese, sugar, flour and orange rind and beat with electric mixer until light and fluffy.
Add together the eggs and egg yolks one at a time, beating well after each addition. Stir in milk.
Pour into crumb crust.
Bake in hot oven (475\u00b0) for 10 minutes.
Lower temperature to 200\u00b0 and bake 1 hour longer. Let cake remain in oven until cool (about 1 hour).
Remove from oven; cool completely on wire rack.
Loosen around edge with a knife; release.
