Birria(Mexican Roast) - cooking recipe

Ingredients
    1 large brisket
    3 full flowers garlic
    6 bay leaves
    water
    1 Tbsp. oregano (leaf if possible)
    1 Tbsp. peppercorns (don't grind and don't skimp)
    1 Tbsp. red chilies
    soft flour tortillas
Preparation
    Place the brisket in a large roasting pan.
    Fill roasting pan with water to half-way level of brisket.
    Add spices.
    Cook 6 to 8 hours, covered, at 250\u00b0.
    During last hour, add red chilies.
