Holiday Potato Bake - cooking recipe

Ingredients
    5 to 6 c. leftover mashed potatoes
    3 to 4 Tbsp. butter or margarine
    1 c. Cheddar cheese, grated
    3 eggs
    1/2 paprika
    1/2 c. each red and green pepper
Preparation
    If potatoes are not seasoned, salt and pepper to taste.
    In a bowl, lightly beat egg yolks.
    Add melted butter and paprika, beating well. Combine mixture with potatoes, cheese and chopped peppers.
    Stir until well blended. Fold in stiffly beaten egg whites. Spoon into buttered 6-cup ring or 1 1/2-quart casserole. Bake at 350\u00b0 for 40 to 50 minutes or until lightly browned.
