Italian Eggplant With Beef(Yields 6 Servings) - cooking recipe

Ingredients
    1 lb. lean ground chuck
    2 Tbsp. olive oil
    1 large onion
    2 Italian eggplants
    8 oz. crushed tomatoes
    Italian seasoning to taste
    1 tsp. sugar
    1 tsp. salt
    2 Tbsp. bread crumbs
    1/4 c. Parmesan cheese
Preparation
    Brown the ground beef (can substitute ground turkey).
    Just before meat is done, add chopped onion and clove of crushed garlic.
    Cook until onion is done.
    Add sliced eggplant and crushed tomatoes (can use stewed tomatoes) to beef mixture.
    Add seasonings.
    Cook until eggplant is tender.
    Add bread crumbs and fresh grated Parmesan cheese and serve.
