Fusilli With Tomato And Olive Sauce - cooking recipe
Ingredients

1/2 c. olive oil
1 onion, minced
1 garlic clove, minced
1 (32 oz.) can tomatoes, drained and chopped
1/2 c. black olives
1/2 c. green olives
2 Tbsp. capers, rinsed
2 tsp. red wine vinegar
1 tsp. oregano
salt and pepper to taste
pinch of sugar
1 lb. short fusilli or pasta twists
1 c. grated Romano cheese
Preparation

In a large skillet heat oil.
Add onion and garlic.
Cook until onion is soft, but not brown, 6 to 8 minutes.
Add tomatoes, olives, capers, vinegar, oregano, sugar, salt and pepper.
Simmer 15 minutes on low heat.
While sauce is cooking, put pasta on to boil.
Cook about 15 minutes.
Add pasta to sauce and toss.
Mix in cheese and serve immediately with some additional grated Romano cheese on the side.
