Corn And Bell Pepper Salad - cooking recipe

Ingredients
    2 c. fresh or frozen corn
    1/2 c. diced bell pepper
    1/8 tsp. minced garlic
    1/4 tsp. cumin
    2 Tbsp. olive oil
    2 scallions, sliced thin
    1 Tbsp. lemon juice (fresh)
    salt and pepper
Preparation
    In a large skillet saute corn, bell pepper, garlic and cumin in oil over low to moderate heat for 3 minutes.
    Season with salt and pepper to taste.
    Add scallions and stir for 30 seconds.
    Transfer to a bowl and add lemon juice and toss.
    Serve at room temperature.
