Stir-Fry Beef With Asparagus - cooking recipe

1 lb. beef flank steak, partially frozen
2 Tbsp. soy sauce
1 Tbsp. cooking oil
1 Tbsp. corn starch
12 asparagus spears
3 Tbsp. cooking oil
1 tsp. sugar
2 Tbsp. dry sherry
2 Tbsp. chicken broth
Preparation

Using a sharp knife, cut flank steak across the grain into very thin slices. Blend soy sauce, 1 tablespoon oil and corn starch. Pour over sliced beef; stir to coat. Bias cut asparagus into 1 inch pieces. Drop into boiling water 1 to 2 minutes; drain. Heat wok or skillet with 3 tablespoons oil. When sizzling, add 1 teaspoon sugar. Add beef; cook and stir 1 minute. Add asparagus; cook and stir 1 minute longer. Add sherry and chicken broth. Cook 1/2 minute longer. Serve over hot rice. Makes 4 servings.
