Chipped Beef Log - cooking recipe

Ingredients
    3 pkg. dried beef
    3 (8 oz.) pkg. cream cheese
    1 jar horseradish (about 6 oz. or to taste)
    1 bunch scallions, cleaned and cut to approximately 5 inches and chopped
Preparation
    Put cream cheese in microwave for a minute or until soft. Stir the cream cheese until creamy and then add horseradish and scallions.
    Open the dried beef.
    Save 10 or 12 of the outside slices.
    Tear the remaining dried beef and add to cream cheese mixture.
    Place the reserved pieces of beef on plastic wrap. Form a base, approximately 3 x 12 inches for the log.
    Put the cream cheese mixture on the beef to form a log.
    Cover with the rest of the beef.
    Roll into a log.
    Refrigerate for 24 to 48 hours.
    Serves about 20.
    Serve on mini bagels or Triscuits. Leftovers will freeze for a month if wrapped tightly.
