Lobster Newburg - cooking recipe

Ingredients
    1 1/2 lb. cooked lobster
    3 Tbsp. butter
    1 1/2 c. Madeira wine or sherry
    1 1/2 c. cream
    3 egg yolks, beaten
    1/4 tsp. salt
    Dash cayenne pepper
Preparation
    Cut lobster in large pieces, heat slowly in butter for 5 minutes.
    Add wine and simmer slowly until wine is reduced.
    Beat cream and eggs together.
    Add lobster and seasonings.
    Cook, stirring constantly until thickened (low flame).
    It thickens in about 5-10 minutes, like a white sauce.
