Beef Provencale - cooking recipe

Ingredients
    1 1/4 lb. beef tenderloin
    2 Tbsp. butter
    1 1/2 tsp. salt
    dash of ground pepper
    1/4 c. water
    10 potatoes
    6 Tbsp. butter
    1 to 2 cloves minced garlic
    3 Tbsp. finely chopped parsley
Preparation
    In a skillet, heat butter until lightly brown.
    Add meat; brown well on all sides.
    Sprinkle with half the salt and pepper.
    Reduce heat; cover and let meat cook about 10 minutes.
    Turn once during cooking.
    Remove meat; cover with foil.
    Add water to pan.
    Heat and scrape drippings; strain juices.
    Peel potatoes; slice thinly. Layer into a greased baking dish.
    Sprinkle with remaining salt and pepper.
    Pour pan juices over.
