Ingredients

3 c. apples, dried
2 1/4 c. water (warm)
1 tsp. lemon extract
2/3 c. brown sugar
2 (9-inch) unbaked pie shells
Preparation

Soak apples in warm water. Cook over low heat until soft. Mash apples and add lemon and sugar. Pour into unbaked pie shell. Cover with top crust. Seal edges. Bake at 425\u00b0 for 15 minutes; lower heat to 350\u00b0 for 30 minutes. Serve warm.
