Scotch Eggs - cooking recipe
Ingredients

2 c. firmly packed sausage meat
5 hard-boiled eggs, shelled
1 large egg, beaten
dusting of flour
dry white breadcrumbs
deep fat for frying
Preparation

Dust each egg with a little flour.
Divide the sausage meat into 5 pieces.
On a floured surface, work each piece into an oval.
Place an egg into the center of each one; mold the sausage meat around it, making sure the surface is free from cracks.
Put the beaten egg and breadcrumbs onto separate plates; coat each egg first in the liquid egg, then in the breadcrumbs so that the surface is completely covered.
Coat each egg again if you like to ensure a really good surface.
