Eggplant Dressing - cooking recipe

Ingredients
    1 large or 2 small eggplant
    2 c. corn bread, crumbled
    2 Tbsp. chopped onion
    1/2 lb. sausage
    1 Tbsp. parsley
    salt and pepper to taste
Preparation
    Peel and boil eggplant until tender; mash.
    Cook sausage and onion until done.
    Crumble.
    Mix all together and bake at 350\u00b0 until set like dressing.
