Christmas Breakfast Casserole - cooking recipe
Ingredients

1 pkg. hash browns (or shredded baked potato)
1 stick margarine
salt and pepper
4 eggs (I use Eggbeaters for cholesterol free)
1 can chopped green chiles
1/2 chopped green pepper
1/2 chopped onion
1/2 chopped Polish sausage (I use turkey-fat free)
1/2 c. chopped ham
3/4 c. shredded cheese (cheddar or Monterey Jack)
Preparation

Mix hash browns, margarine, salt and pepper and press into 8 x 12 pan.
Bake at 400 until golden brown.
I do this the day before and store in refrigerator.
Combine remaining ingredients and pour into cooked hash brown crust.
Bake until eggs are set, about 20 minutes, in 375 degree oven.
