Ingredients

2 c. flour
1 tsp. baking soda
1 tsp. salt
2 1/2 Tbsp. sugar
2 c. buttermilk
2 eggs (3 if small)
2 Tbsp. oil
1/2 c. oatmeal
Preparation

Combine all ingredients, mixing well.
Add additional milk in small amounts if necessary to thin batter.
Lightly oil a nonstick griddle with vegetable spray and heat it over medium heat.
On the heated griddle, pour sufficient amount of batter to make size of pancake desired.
Cook pancakes until they begin to bubble on the surface, then flip them over and lightly brown them on the other side.
Repeat the procedure until all the batter is used up, re-oiling the griddle only to prevent the pancakes from sticking to it.
