Curried Black Beans And Rice With Sausage - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 medium onion, minced
    1 Tbsp. curry powder
    1/2 lb. smoked turkey sausage, thinly sliced
    3/4 c. chicken broth
    2 (16 oz.) cans black beans, drained
    1 Tbsp. white wine vinegar
    3 c. cooked rice
Preparation
    Heat oil in large heavy skillet over medium heat.
    Cook onion and curry powder, stirring well, until onion is tender.
    Stir in sausage and broth; simmer 5 minutes.
    Stir in beans.
    Cook until hot, stirring constantly.
    Remove from heat and stir in vinegar. Spoon over rice.
