Ingredients

2 eggs
1 slice medium onion
1 tsp. salt
1/4 c. parsley clusters
2 c. diced raw potatoes
1/4 c. flour
Preparation

Break eggs into blender container; add onion slice, salt, parsley and half of the potatoes.
Blend on high for 30 seconds. Add rest of potatoes and flour; blend until the last potato cube has been blended in.
Pour onto hot, greased griddle by tablespoonfuls.
Cook on both sides until brown.
Makes 8 pancakes.
