Peanut Butter And Jam Muffins - cooking recipe

Ingredients
    2 c. flour
    2 tsp. baking powder
    1 tsp. baking soda
    2 eggs
    1/4 c. milk
    1/2 c. natural peanut butter
    3/4 c. thawed, frozen, unsweetened apple juice
    1/4 c. margarine
    6 Tbsp. no-sugar strawberry fruit spread
    1/2 c. chopped peanuts
Preparation
    Combine dry ingredients in bowl; set aside.
    Beat eggs and peanut butter until smooth.
    Blend in apple juice concentrate, milk and margarine.
    Add to dry ingredients, mixing just until dry ingredients are moistened.
    Add peanuts.
    Spoon half of batter evenly into 12 greased muffin pans.
    Drop 1 1/2 teaspoons strawberry fruit spread into center of each.
    Cover with remaining batter.
    Bake at 350\u00b0 for 18 minutes.
    Let cool 5 minutes.
    Remove from pan.
    Serve warm.
