Nana'S Orange-Garlic Roast Pork - cooking recipe

Ingredients
    loin of pork roast
    1 Tbsp. coarse salt
    2 Tbsp. minced garlic
    2 tsp. thyme
    1 tsp. bay leaf, crumbled
    1 (6 oz.) can frozen orange juice, thawed
    1/4 c. red wine vinegar
    1/4 c. olive oil
Preparation
    Rinse the pork and dry it.
    Mix together the salt, garlic, thyme and bay leaf.
    Rub the mixture into the pork.
    In a bowl, mix together the orange juice, vinegar and oil.
    Place pork in container and pour liquid mixture over it.
    Let stand 24 hours in the refrigerator, basting several times.
    Roast on spit 30 minutes a pound.
