Ingredients

1 c. sugar
2 heaping Tbsp. flour
4 eggs, separated
2 c. buttermilk
1 c. coconut
2 tsp. vanilla
Preparation

Mix sugar and flour.
Add egg yolks and buttermilk.
Mix until smooth.
Cook over medium heat, stirring often, until stiff. Remove from heat.
Add coconut and vanilla.
Stir.
Pour into baked 10-inch pie shell.
Top with your favorite meringue (using the leftover egg whites).
Bake according to your meringue recipe. Cool, then refrigerate.
