Christmas Rice - cooking recipe
Ingredients

1 c. uncooked rice
2 cans undiluted chicken with rice soup
1 1/4 c. water
1 large onion, diced
1 small jar sliced pimentos with juices
1 small can mushroom pieces with juices
1 tsp. salt
1/2 stick margarine cut in pieces (I use less margarine and add 2 Tbsp. garden peas)
Preparation

Mix all together and pour into a large greased casserole. Bake, uncovered, at 350\u00b0 for 45 minutes to 1 hour, stirring occasionally.
Taste when liquid is nearly gone, and if rice isn't soft, put the lid on to finish cooking.
Serves 6 to 8.
